About
Salina San Vicente is a family-run sea salt producer located in San Fernando, Cádiz, within the Bahía de Cádiz Natural Park. Documents held in the General Archive of Simancas record its activity before 1725. Once one of San Fernando’s three royal saltworks, it passed into private ownership following the nineteenth-century disentailments. In 1923, José Ruiz Belizón purchased it from the Marquis of Casa Recaño, and it has remained in the Ruiz family ever since. Today, the company is managed by the ninth generation of a family with a long salt-making tradition.
Combining traditional expertise with a strong commitment to quality, the company was the first in Spain to obtain organic certification for virgin sea salt and fleur de sel. Its approach reflects the principles of the blue economy, bringing together salt production, local livelihoods and care for the natural environment.
Both its salt and restaurant activities carry the Andalusian Natural Parks quality certification. The company also contributes to the management of the surrounding protected area through Manuel M. Ruiz, a company partner, biologist and saltmaker who serves on the Natural Park’s governing council.
Alongside salt production, Salina San Vicente welcomes visitors through organised tours showcasing its products and salt-making heritage. A restaurant accommodating more than 300 guests completes an experience that connects traditional salt production with local gastronomy and the distinctive landscape of the Bay of Cádiz.
